These delicious dairy-free muffins are very easy to prepare. Great for breakfast or as a guilt-free snack any time of the day, these muffins will provide you with healthy fats, fiber and protein and satisfy your hunger.
Bake a whole batch (yields 16 medium sized muffins) or double the recipe and freeze for later use; can be frozen for up to 3 months.
Ingredients
Dry ingredients
1 Cup whole wheat flour
1 Cup Oat flour (you can also use coconut or almond flour)
½ Cup Hemp hearts (optional add 1 more Tbsp for sprinkling on top)
½ Teaspoon salt
1 Teaspoon Baking Powder (use the aluminum-free)
1 Teaspoon Baking soda
Liquid ingredients
2/3 Cup raw honey
1 Cup coconut milk
2 eggs (preferably if organic)
1 teaspoon vanilla
½ Cup orange juice
3 Tablespoon orange zest (preferably from organic oranges to avoid pesticides in orange peel). Reserve 1 tbsp for sprinkling on top
½ Cup virgin coconut oil (you can substitute with olive oil or avocado oil)
Instructions
Heat oven to 400 F.
Prepare muffin pan by rubbing with coconut oil and flour or by placing paper liners in each section.
Mix dry ingredients together in a bowl and liquid ingredients together in another bowl.
Add dry ingredients to liquid ingredients gradually while mixing until completely blended. Do not over mix.
Divide batter equally into 16 muffin cups using large spoon or scoop.
Mix 1 tablespoon hemp hearts and 1 tablespoon orange zest together; sprinkle equally over each muffin.
Bake in preheated oven for 20-25 minutes, be careful not to overbake.
Muffins are ready when a toothpick inserted in the center of a muffin comes out clean or when muffin top rebounds back into shape when gently pressed with finger.
Let stand about 5 minutes, unmould and cool on wire wrack.
Muffins may be eaten warm or cold. They can be stored in an air-tight container in the refrigerator for 7 to 10 days or frozen for up to 3 months.

Once muffin moulds are filled and just before baking, you can insert a small square of dark chocolate in the center of each muffin. Be sure to press it gently into the dough with a knife.
